Here's Ed Collins, working out of his home unit, Eastern University. Ed has been with Sodexo for close to 35 years, and is a graduate of the Culinary Institute of America in New York City.

Before joining Sodexo, Mike owned and ran his own restaurant in Philadelphia. Mike came to Eastern University in 1998 and focuses much of his time handling specific dietary requests from Eastern University students.

Mark HinkleMark Hinkle
Production Manager

Mark, our Executive Chef & Production Manager, has been with Sodexo for over 10 years now. He also runs a small personal chef business. He is responsible for creating menus, food purchasing, catering, culinary training, and district culinary support.

Mark has been in the food business since he turned 15, working at a local deli as a dish washer & stocker. By 17, he had begun work for Sodexo at Eastern University as a short order cook in the Eagle's Nest. There he discovered a passion for food and began attending the Restaurant School of Philadelphia. While attending classes, he continued working at Eastern University in the Breezeway Grill. After graduation, he wanted more catering experience and transferred to The College of New Jersey and was promoted to Executive Sous Chef. Then in 2003, Mark was offered a position to work with the great French chef Phil Poli at the Camden Aquarium. But eventually Mark began to miss his old friends and Eastern, so he transferred back to Eastern.

Retail Manager

Steve, our Retail & Marketing Manager, has been working for Sodexo since 1999. He manages all three retail locations on campus (The Eagle's Nest, Breezeway Grill, and Jammin Java), and handles student employeement for all of our Student Workers.

Steve has been in foodservices since his 16th birthday. In 1999, as a sophomore Eastern University student, he took a simple summer job working for Sodexo... which became his job through the school year... and he kept working right until graduation, when he was offered a permanent position.

Steve loves to spend his downtime with his wife (also an EU Alum) and two kids.

Floor Supervisor

Doc has been a working at Eastern University for longer than anyone can remember. He supervises the Dining Commons on Sundays, as well as most weekday breakfasts & lunches.
